This is the latest edition of Arts & Food, created in collaboration with artist Merve Sağit. The experience brings together an immersive art installation and a five-course menu curated by Andrea Flores.
In this edition, we will explore migration, the sea, and the transformative experience of arriving in a new land. Drawing on the image of waves meeting the rocks, the installation reflects on how migration is a continuous process of encounter and negotiation. The waves come and go, returning again and again, gradually reshaping the landscape—just as migrants, through persistence and presence, transform both themselves and the places they inhabit.
Surrounded by textiles, found materials, and immersive soundscapes, guests will be invited to engage with the work through all their senses. This multisensory experience encourages reflection on movement, belonging, memory, and the emotional landscapes of migration.
The Arts and Food experience begins with First Tide, a carrageen jelly infused with rose, followed by Turkish olives to share. Guests will then enjoy Where the Tide Rests, a blue corn taco inspired by midye tava, and Undercurrent, a raw tuna tostada featuring Irish sea spaghetti and Mexican flavours. The meal concludes with After the Tide, a refreshing lemon sorbet finished with Turkish olive oil, sea salt, and pistachio, accompanied throughout by a house-made elderflower, lemon, and mint water.
